Maxime Potfer worked at the Experimental Cocktail Club before opening POVERA, and it shows in every glass. Here, cocktails are not frozen on a menu for years. Like in the best restaurants, there are seasonal creations, designed based on available products, inspiration of the moment, and what makes sense to be drunk today rather than yesterday. The result? Precise, balanced, creative cocktails without trying to impress at all costs. In Nice, bars that work at this level remain rare. Moreover, the best advice is often the simplest: don't necessarily order what's written on the menu. Ask Maxime what he wants to prepare tonight. So far, this strategy has never disappointed me.
