A truly great selection of wines, lots of natural options, well-prepared Mediterranean products, small portions for informal sharing, and an atmosphere that quickly makes you lose track of time. The best plan: don't over-organize, order as you go, and let the apéro become dinner.

Don't order everything at once: grab two or three plates, a first glass, then let the team guide you for what follows. Rouge works much better that way—an apéro that gently drifts into a real dinner, with a bottle chosen along the way—than as a highly structured starter-main-dessert meal.
