At 19 Saint Roch, Pierre Touitou offers a very personal contemporary cuisine that is precise yet never conventional. Seasonal ingredients meet seasonings that travel extensively: miso, harissa, tamarind, chilis, spices, and condiments regularly shake up a very French base. The menu changes frequently, so you come here primarily for the chef's cooking rather than for a specific dish. And I particularly love the open counter facing the kitchen, where you can watch the entire team at work.
